Turkey Salad Sandy


1 cup cooked organic turkey
1/2 diced apple
1 stalk chopped celery
1 chopped green, or red onion
1 tablespoon toasted and chopped pecans
1 tablespoon dried cranberries (no sugar)
2 tablespoons egg-less mayo
1 splash lemon juice
2 leaves sage (chopped)
salt and pepper to taste
2 leaves lettuce
2 slices gluten free bread or just wrapped in lettuce
