2 tablespoons olive oil
1 1/4 cups finely chopped onion
2 cloves garlic, minced
1 medium chopped red bell pepper
1 teaspoon ground cumin
1 1/2 tablespoon chili powder
4 tablespoons fresh lime juice
2 (19-ounce) can white beans
3 cooked chicken breasts, chopped
1 (14-ounce) can chicken broth
1 (4 1/2-ounce) can mild green chilies, drained
2/3 cups heavy cream
In cast iron pot, heat olive oil, then add onion, garlic, red pepper, cumin, chili powder and lime juice; cook until the vegetables are tender; add the chicken broth and heavy cream then stir; then add chicken, beans and green chilies.
